New Exciting Menu at Wilton Court


A new year and what a way to kick it off with a new exciting menu from our new head Chef Laura O’Brien and her team. Using local produce, we are really promoting what the Wye Valley and beyond has to offer. With both a lunch menu and a la carte dinner menu there’s something for everybody to enjoy, as either a celebration, intimate evening with your loved ones or just a catch up with friends.

Dinner menu


  • Homemade soup
  • Salmon terrine, citrus creme fraiche, dill, ciabatta wafer
  • Venison carpaccio, blackberries, horseradish cream, hazelnuts
  • Hereford hop twice baked souffle, baby leeks, parmesan crisp, pomegranate
  • Dorstone goats cheese and caramelised red onion tart, dressed rocket, aged balsamic
  • Slow cooked pork belly, celeriac remoulade, caramelised apple, celeriac puree
  • Truffled wild mushrooms and spinach vol au vent, garlic cream
  • Scallops, spiced cauliflower puree, pickled cauliflower, black pudding bon bon, pancetta


Main course:

  • Rib-eye steak, sweet potato fries, garlic mushrooms, peas, peppercorn sauce, watercress
  • Mozzarella & tomato gnocchi, lemon pesto, tenderstem broccoli
  • Herb crusted hake, seafood cassoulet, poached egg, samphire
  • confit duck leg, herb croquette, braised red cabbage, cherry reduction
  • Fillet steak, pomme puree, braised shallot, wild mushroom, cavolo nero, Jus
  • Pan roasted chicken supreme wrapped in pancetta, pea & saffron risotto, crispy sage, jus
  • Gourmet burger, crispy pancetta, cheese, brioche bun, baby gem, tomato, gherkin, truffle fries, coleslaw
  • Feta & roasted root vegetable tart, spiced israeli cous cous, peashoot salad



  • Pistachio and olive cake, poached peaches, candied pistachio, apricot ice-cream
