Here at the Wilton Court we are excited to announce we are now looking for a full time commis/CDP chef.
Must have a least 1 years previous experience
- To follow the Formal Hazard Analysis and Critical Control Point practices as set up within the department
- To ensure the smooth running of his/her section and to see that all areas of the section maintain the Wilton Court standards.
- To cook/ prepare any food on a daily basis as instructed by the head chef and second according to business requirements.
- To follow the daily and weekly cleaning schedule as directed by the head and second chef and to log tasks completed
- Under the guidance of his/her Head Chef and second chef to organise the shift on the section with regard to mise-en-place production and its service.
- To maintain good employee relations with other staff
- To report any problems regarding failure of machinery and small equipment to his/her Head Chef and to follow up and ensure the necessary work has been carried out.
- To keep the section clean and tidy.
- To pass all information to head chef
- mise-en-place (report everything)
- To inspect daily with the chef, all fresh food received to ensure quality is maintained
- To ensure that high levels of cleanliness are maintained in all areas of the kitchen, such as machinery, small kitchen equipment, fridges and floors, following the kitchen weekly and daily cleaning schedules.
- To record fridge and freezer temperatures as directed by the head and second chef
- As specified daily by his/her Head Chef to ensure the overall smooth running of the section, e.g. setting up of food mise-en-place and china and silverware requirements, etc.
- 16-18k per annul depending on experience

Welcome to the Black and White Villages of North- West Herefordshire and the market towns of Leominster and Kington. Together they contain hundreds of timber framed buildings, many of great age. Their Churches too, remind us of the long history of this area, containing records of people and events going back to Domesday and beyond.
Today these villages still possess the feeling of community which many urban dwellers would dearly love to regain. An hour or two spent at any of the places on the trail, visiting the church, the pub, tearooms and shops, looking at the houses and exchanging a word with the villagers, will give you a taste of this desirable country life. The circular trail is set out in a clockwise direction, and although the commentary starts and finishes at Leominster you may join at any point. The route is signed throughout with brown and white tourist signs. Please be prepared for and patient with, farm vehicles. The total distance is about 40 miles with stops at the villages and places of interest along the way, the circuit provides an enjoyable excursion at any time of the year.
Leave your car behind as you do not need a car to enjoy the black and white villages: a few of the villages along the route are accessible by public transport. Walking and cycling routes are also available around the Black and White villages, cycle hire is available from Wheely Wonderful on 01568 770755. who also arrange walking and cycling holidays.
The Black and White audio car tour is approximately 45 minutes long and is available for purchase from the Tourism Information Centers.
The Black and white trail is approximately 45 minutes away by car for the Wilton Court so is very easy to explore during your visit and can also be reached by public transport via Hereford.

The Wilton Court has taken a stand in the Market Square and our two lady chefs Stacey Barber and Rachael Williams will be cooking and serving pancakes from late morning through the afternoon. The pancakes will be served with a choice of Lemon and sugar at £1.00 or Toffee or Raspberry Sauce at £1.50
Jamie Williams from Sunshine Radio will be joining the Great Ross on Wye Pancake Races for the afternoon, commenting live on air from the event.
Even if you are not entering a race we do hope to see you there for a fun afternoon.
Highlights of the 2012 Wye Valley Chamber Music Festival, from January 14 to 22, include an opening Saturday Schubertiade at the Bishop‘s Palace in Hereford, with the Trout Quintet and the song cycle, Die Winterreise.
The festival then celebrates the chamber music of Elgar at the picturesque St Briavels Church and the second weekend includes Discovery Day, always the festival’s hottest ticket, at Treowen Manor near Monmouth. The finale at Helen’s Manor near Ledbury features Hungarian and gypsy-inspired music and there’s a choice of pre-concert talks.
The Kreisler Quartet will be the first participants in an exciting addition to this year’s festival – the resident Quartet Scheme, a new project for young musicians.

Flog it! Comes to Hereford The popular BBC2 antiques programme presented by Paul Martin, is coming to Herefordshire. Flog it!- the major BBC antiques series- regularly gets an audience of 1.5 million viewers each weekday- around 15% of the television audience and on Saturday 26th November Hereford cathedral and its newly restored cathedral close will be hosting the Flog It! Valuation day. Rather like a treasure hunt, members of the public are invited to bring along antiques and collectables they might be interested in selling. Once valued, the owner and team of experts decide whether it should go forward for auction.it the item is chosen it is sold a few weeks later- often the owner making a tidy sum. Everyone who goes along to the valuation day will receive a valuation-even if their antiques are not chosen to go forward for auction. Previous programmes have seen a small cream jug sold at auction for £1,300; a ceramic bowl, bought for £4 at a car boot sale, achieving £1,500; and a lady in Aberdeen sold a shelly tea set for a huge £3,400! More recently we surprised a gentleman who bought in a ceremonial cup made from Rhino horn; it later sold for £44,000!
